NVQ/VRQ (Level 3) ADVANCED CRAFT
(COOKERY)
This course is for you if you've successfully
completed a Level 2 course and wish for a more
complex and technically-advanced course that
also introduces the supervisory aspects of kitchen
management.
The topics covered include: Advanced Cookery
Methods; Skills and Techniques; Introduction to
Recipe and Menu Design; Food Purchase; Cost
and Control; Introduction to Staff Supervision.
You will be exposed to the reality of working within
an industrial setting, with a particular focus on
preparing menus for fi ne dining, in our restaurant
kitchens, where you can develop kitchen supervisory
and craft skills.
Specific Entry Requirements: NVQ Level 2 in Food
Preparation or appropriate experience in the industry.
You should be committed to a career as a chef in quality
establishments.
Additional Expenses: Approximately £50 for materials.
Progression: You have the opportunity to progress to a Foundation degree in Hospitality Management,
or a Higher National Certifi cate in Managing Hospitality Operations, or to apply for chef positions in
leading establishments.
BND National Diploma (Level 3) HOSPITALITY
This two-year course enables you to prepare for supervisory and junior-management positions in the
hotel, catering or hospitality industries.
Within this course you will study areas such as: Kitchen Health and Safety; European Cuisine; Front-
of-house Operations; Customer Care; Marketing in Hospitality, and more. You will learn to work
individually and as part of a team. You will also have the opportunity to gain extra qualifi cations in Food
Preparation and Cooking, Hygiene, First Aid, Customer Service and Intermediate Food Safety.
Specific Entry Requirements: Four GCSEs at Grades A* - C (to include English, Maths and Science).
Additional Expenses: Course textbooks and restaurant uniform.
Residentials: Possible European trip
Work Experience Opportunities: Placements include country-house hotels, fi ne-dining restaurants,
conference centres and local, family-owned inns.
Progression: Into employment or to university or specialist college.
