NVQ (Level 1) ENTRY TO HOSPITALITY & CATERING

This one-year full-time course combines practical work, theory sessions and demonstrations, all
delivered by highly-experienced tutors and industry professionals. The topics covered include: Food
Preparation and Cookery Methods; Commodities; Food Hygiene and Safety; Kitchen Equipment;
Restaurant Service; Drink Service; Communication; Team-work; Basic Costing; Information Technology.
Throughout the course you will have the full support and guidance of our highly-skilled and professional
teaching team, all of whom have a wealth of industry experience.

Specific Entry Requirements: You will need to pass an interview, including practical activity.

Residentials: Visits to local industry establishments will be arranged.

Progression: You have the opportunity to progress to the Diploma in Professional Cookery;
alternatively you may enter employment at a junior level in food preparation and still continue with your
training by following an apprenticeship or part-time course.

NVQ/VRQ (Level 2) PROFESSIONAL COOKERY AND FOOD & DRINK
SERVICE

This one-year course is both enjoyable and challenging and provides you with the skills, knowledge
and qualifi cations for developing a career in the hospitality and catering industry. You will gain real
experience and employability skills in our busy restaurant and kitchens, which are run as commercial
outlets. You will also have the opportunity to cook and serve at special events and possibly obtain part-
time employment through one of our many contacts.

Specific Entry Requirements: NVQ Level 1 in Food Preparation or two GCSEs at Grades A* - C,
preferably in English and Maths, plus a skills assessment. Candidates with a proven track-record of
work within the industry will be considered for direct entry.

Additional Expenses: You will be expected to purchase the full uniform for kitchen and restaurant, as
detailed on the uniform list provided.

Progression: You will have the opportunity to progress onto the Advanced Chef Diploma; alternatively
you may enter employment or an apprenticeship.
